How to cancel Weight Watchers
This one cancels from your account page in a couple of minutes, with nobody to talk to.
The catch
The plan you are on decides whether cancelling stops the billing or merely schedules it to stop. Commitment and prepaid plans run to the end of the committed period no matter when you cancel, so a three month commitment cancelled in week two still bills all three months. The cancellation is real, it simply takes effect later than the confirmation screen leads people to expect.

After you cancel Weight Watchers
On a monthly plan, access continues to the end of the current period and then ends. On a commitment or prepaid plan, access and billing both continue until the committed term finishes, which can be months away.
Everything digital goes at the same time: the app, the food and activity history, the recipe collections you saved and any progress tracking. Export or screenshot anything you want to keep before the end date rather than after it, because the account is not readable once the subscription lapses.
Workshop access ends with the subscription for anyone on a plan that included it, and workshop attendance does not carry over to a later subscription.
Worth knowing
For Commitment or prepay plans, cancellation takes effect at the end of the committed period. Purchases made inside the iOS app are Apple billed via StoreKit and must be cancelled in Apple Account subscriptions.
